Mojakka Piragis (Finnish Fish Stew)

One Cup each potatoes, celery, and onions diced in to 1/2 inch chunks
Salted Water to Cover
Approximately equal parts milk and half-and-half to cover potatoes by 1 to 2 inches (about 1-1/2 to 2 cups each)
2 to 4 tablespoons butter (or to taste)
1/2 to 1 pound boneless, skinless walleye fillets (or other game fish fillets) cut into 1/2 inch chunks
Salt and freshly ground black pepper to taste

Bring potatoes, celery, and onions to a boil over high heat and cook until potatoes are tender. Drain and return to saucepan. Pour enough milk and half-and-half to cover potato mixture by 1 to 2 inches, depending on how hearty you want your soup. Add the butter and bring to a boil. Add walleye fillet cubes, cover pan and remove from heat. Let stand covered to 10 minutes. Taste and add salt and pepper to taste. Makes about 1 1/2 quarts.
