Hoito Mojakka (Finnish Meat Soup)

Recipe from Hoito Restaurant, Thunder Bay, ONT.

2½ pounds beef shortribs
3 quarts water
2 tablespoons salt
12 whole allspice
2 large carrots, sliced
3 stalks celery, sliced
1 large onion, sliced
10 medium potoatoes, sliced

Boil meat for 15 minutes; rinse and drain. Add new water, salt and allspice. Boil for 1 hour. Add all sliced vegetables except potatoes and boil an additional 30 minutes. Remove meat and cool. Add potatoes and boil 30 minutes longer. Remove meat from bones and cut into pieces. Return meat to pot.

6-8 servings.
